Issue with DFF Date in XML Publisher Report (iRecruitment Offer Letter)

Five offer letters have a DFF for a Fixed Term End Date that the recruiter populates when creating the offer letter when you go to review the letter it does not show the date instead it shows T00:00:00.000-00:00.
We have one offer letter that has a similar DFF for Disturbance End Date which is setup in the template similar to the other five offer templates which shows the date correctly. We don't seem to be able to see what the issue is, the setup for the DFF is exactly the same..

Screenshots are attached of the setup.

Has anyone had anything similiar before?
