Copy data from prod to dev environment setting

I need to copy table data from prod to dev environment setting to update the DEV environment and I need a guide. I would like to make a backup before you start DEV environment if possible? I do not know if I have to copy also the Control Table and the Business Data? To copy data from the tables created personal over the years, I must use a SQL script? I ask for help thanks
