Why DML should be limited during GG upgrade to 12.1.2?

According to upgrade guide, http://docs.oracle.com/goldengate/1212/gg-winux/GWUUP/upgrade_ora.htm, during upgrade DDL and DML transactions should not be permitted on the SOURCE database. I wonder why? Associated with this question I am not sure once upgrade is completed how new extract is able to pick up transactions from where the old extract left off.
