Sendmail logging of to, from and payload

We have a security check in which they are asking about sendmail logging wanting to know from where the messages are coming, where are they going and what the actual message is.  Our sendmail server is setup as a relay only with pretty much default configurations.

from sendmail.cf

  # log level
  O LogLevel=19

from /etc/syslog.conf

    mail.debug    /var/adm/mail.log

I can find the payload message; any thoughts on finding the payload messages that are being sent?
