Item Organization assignment

We have  distribution warehouses (10) and other organizations (little warehouses and sales centers -159). Using an Item Master with a warehouse and  other organizations, we define the item just once - in the Item Master. Then we assign the item to the all warehouses and to the organizations. Finally, we change the  attributes in each organization to describe the different behavior of the items in those organizations. Little warehouses and sales centers have the same attributes but 10 distribution warehouses have other attributes. 

Can we do the same without assigning items to the organizations, just using items from the main organization?
