Character data set control question

Is it possible to control or define valid charactors used within JDE 9.1? We are running DB2 on ISeries and occasionally run into and issue with invalid charators being stored in String or Charactor fields.

I am looking for a global solution for vanilla Applications and UBE's. In our customizations we use a UDC that defines valid charactors.
