Changing Picklist Values

I have a current picklist that has over 30 values. These values are industry sectors such as Aviation Travel & Tourism, Life Sciences, MedTech, Business Services, etc. These values are connected to contacts and contacts can have more than one value. For example, a contact can have Aerospace and Healthcare Services. If I need to update values for all these contacts, what is the easiest way to do so? Essentially, we are going from around 30 values to less than 10. I understand this may be confusing, so please ask questions. I appreciate any help you can provide.
