Changing the fields shown in Lists

Hi, when I click on any of the objects and click the default lists, I get a default view of the fields.  The fields I get aren't of any use so I want to change the fields shown to more useful ones but I just can't see where to do it.

I can happily change layouts and have changed the search results view, but I just can't see how to change the 'lists' view.

Is it possible?
