Status Values for Service Request

We need to add some more values to the Status on Service Request object.

Even though on the UI it is a Picklist, we cannot edit it from the field setup. IS there any way we can add more values?

IF not, can we create a Custom Field with more values and remove this completely?

Closed Date will not populate unless we change the Status to Closed.

what other OOTB functionality will break down either in workflows or analytics?

Would it make sense to write workflows to somehow map them 1 to 1 and trigger them in the backend to make sure the OOTB works?
