where to define sale order tolerance limits

Hi,

I found multiple places to define sale order tolerance limits, and want to know what is the correct place (in-case i want to define tolerance limit on an item only).

1- I found place to define tolerance limit at Inventory - Master Items - Order Management (Tab)

2- Also I found place to define tolerance limit at Order Management Super User - Setup - Shipping Tolerances Form

3- Also got following profile options to define tolerance limits;

     a- "OM: Over Shipment Tolerance"

     b- "OM: Over Return Tolerance"

     c- "WSH: Overpicking Enabled"

Would you guide me the correct setup for defining over shipment and over return tolerance ONLY for one item...
