Sales Order Date Calculations

I receive Sales Orders via the 850 EDI process.  Our customers send us scheduled ship dates, cancel dates (not true cancel date, but more of a latest to ship to arrive on time date), and requested delivery dates.  Whenever I load the orders, the scheduled pick, scheduled ship, requested, and requested delivery dates all get changed to the same date -- typically the requested date.  Is there a way to turn off date calculations as I really need to manage my sales order shipments based on my customer needs and expectations.
