Status transitition in Task status - Need some configuration help

Hello Experts,

We have a requirement to define new task status like "New" and default the value "New" for certain task types on creating tasks. How to define restrictions on the new task status? Ex. New status is not allowed after task is assigned open status etc.

User guide is not very clear and out-dated compared to form version in 12.1.3

Any inputs/documents much appreciated.
