Baseline ESUs and Planner ESU installation options

Hi All,

1. While applying list of ESUs and Planner to environments there is option to "Create OMW Project and Package Assembly" do we need to select this option if we are planning to deploy new full package?

2. If we select this option it creates a lot of projects in OMW and Packages, can we delete these projects and assemble packages after deployed the full package or update package?
