Create Opportunity through email

Has anybody implemented a process where you can create an opportunity in CRM on Demand by sending an email?  We would like it so our salesforce could populate an email template with required information that would create an opportunity in CRM on Demand.  We would expect that the opportunity would be associated to one generic account and then the sales team would change the account to an appropriate account at a later date.

Just wondering if this is a feasible?
