Sales Order Form Personalization

I am trying to personlize the sales order form so that only certain fields are editable.  I would like to disable entire tabs or canvases to accomplish this.  Is there a good way to determine the object name of a tab or canvas?  When I look at the list of objects of type Tab Page it doesn't look like the tab that I am interested in disabling is listed.
