Element Entry Values Payee Details field query

I'm trying to find in which key or descriptive flex-field the Payee Details shown in Element Entry Values is. This is used to hold the payee details for 3rd Party Payments. Does anyone know which flex-field this is held in please? Also, is it possible to configure the validation set which populates the Payee Details LOV? I would like the LOV to be populated with the appropriate 3rd Party Payment Method which relates to the element selected.
