ASCP New Material Plan UI helps?

Is there a document that shows what can be done on the New Material Plan UI? I'm a programmer so I don't use the UI except to verify an environment's configuration or to check out a problem or patch. Here's some of the questions I have for instance:

1) Is there a way to select all the periods and collapse them all at once instead of clicking on the little down arrows through all the periods?

2) I right click on a category which contains both raw materials and end items. When the page displays, I used the pull down and checked only the DC org. It doesn't repaint the screen or eliminate the raw materials (which are not at the DC). I tried view-> refresh on my IE but it's sitting here and spinning like the web server didn't like me doing that. Eventually it comes back but it still didn't elimnate the non end-items.
