Customer specific transcoding policy

Hi,
I need to configure a transcoding policy for a specific customer.
The scenario is the following:
- the traffic coming from customer side to SBC contains only codec G711
- the traffic towards the core network need to be transcoded by adding the additional G729 codec

Could you give me a suggestion on how to configure it ?
