Question about Enabling Process Manufacturing Organization and Costing Method Default in Organizatio

The latest Organization I created defaulted the costing method as "STANDARD".  All the previous Orgs I created have the costing method as "AVERAGE".  I know this set up does not affect the valuation of inventory since that is controlled by the fiscal policy.  I just want to know what I did differently when I created the new org.  How did this happen?  Can I get it changed from Standard to Average so the configurations are consistent?
