Need suggestion for Process Mapping

Hi,

We are a Discrete Manufacturing Industry. Our Civil Department need a system to track the Progress of the projects and status based on which payments to contractors can be made. The only mapping in system available is PR raising for the materials required for the Project (Project code captured in DFF) and PO created for the same. Also PO is raised for the contractors for the work involved (activities to complete). This is for payment purpose. I am trying to link work order (jobs with these line items to track)

I am new to MFG module. My questions are :
