We custom schemas

I have a quesion on custom schemas in R12.2. We would like to manage some of the custom schemas by ourselves and not be controlled by the online patching. Is that possible in R12.2? We tried unregistering the custom schema from the applications but that does not work. Please let us know the best process to achieve this.
