How to change the Material Account of a inventory organization from setup > Organization > Parameter

Currently I am working in R12 upgrade project where we are upgrading the Chart of account from 8 segments to 11 segments.  So I think we need to change the default accounts for the inventory. But did not find out the way to update the same.

Please suggest, what are the things that we need to focus at inventory level for COA upgrade and how to do that.
