logging in a production environment

Can you give me the general rules around having logging turned on for our production environment?  We have some people wanting to turn on sipmsg.log and write it off to another server, but I think this is a bad idea and was wondering if you have guidelines around it.  We register about 35k endpoints, mostly using UDP, so our traffic is heavy.  Your thoughts are appreciated.
