Opportunity visabillity

Hi

I want to restrict opportunity visabillity to just the owner of the opportunity.  We don't use books or teams currently but when I change profiles and take away can read all records others can still see all the opportunities.  Can anyone let me know what I need to do.  I have checked that they are not on the account or opportunity team.
