Suggestion on running the Full Collection Program

We have inventory organizations across the globe and we are running Full Collection Program Every Weekend (Saturday). We are creating two new Inventory Organizations for one of the country in APAC region. Since that country has holiday on Friday and Saturday, we are thinking of running a separate collection plan for those inventory organization. But we are not sure if that is the best practice.

Please suggest which approach is better. Adding the inventory organization to existing collection run or running a separate collection?

Also we are having only a single instance globally.
