Oracle iProcurement - Disable Visibility of Categories when creating a Non-Catalog Requisition

Hello,

We have several categories that we will disable once all the open reqs/POs that have been created against these categories have processed through the system.  In the interim, I would like to ensure these categories are not able to be selected for any new Non-Catalog Requisition is being created.  How can this be accomplished?
