Calculation of Backlog in Demand Management Demantra

We know SBH has capability to collect eight different demand streams from EBS. If we have only DM module of Demantra, using these eight series, how can we calculate backlogs (open sales order with past request date) ?

And for much horizon in past we should collect the data through SBH daily to ensure that all backlogs are captured correctly?
