Editing Pickup and Dropoff Dates in the Delivery Shipping Transaction Form

I am new to EBS so please excuse my ignorance.  I notice in a few different Oracle documents that I should be able to change the Earliest/latest Pick Up / Drop-off dates on the Delivery Shipping Transactions form...but in the EBS instance I work in, these dates are grayed out and cannot be edited.  Is there a way to make those fields that I can edit?
