How to customize "Line Flow - Generic" to add a new sales order line status

We want to customize "Line Flow - Generic" so that when we book a sales order, lines should not automatically come to "Awaiting Shipping" status. Lines should come to a (custom) status (e,g,) "Accepted". And when we progress order, only then it should come to "Awaiting Shipping". How can we do that? We just want one line status before awaiting shipping; that's it.

I don't think that this can be met with any of the standard workflows. We want the steps of "Line Flow - Generic" with only this additional line status.
