Accrual Settlment

Hello,

I have created an accrual that accrues each month an amount based on the hours worked in this month. after 3 years, i want to pay this amount for the employee and start accruing from the beginning. how to settle the Accrual for this employee? and once the amount is paid, how to start accruing from 0?
