Change Default Ship Method for a Profile Class

This seems like it should be relatively easy to do, but I simply cannot find the functionality.  How do I change the default shipping method for a profile class?  Currently we use one shipping method and we want to default it to a different one.  I have looked all over and just cannot find where to change it for all.
