Voucher Match Freight Surcharge Tax

hello, does anyone know of a document/user guide that shows you the proper way to add freight, tax, misc charges to a voucher during 3 way match?

I also need to know how to reverse the charges in the future.

I have searched and searched and cannot find anything. I'm not an AP person but trying to help out the user.
