ODA config - Virtual Install, multiple OVM environments and RAC

We have just purchased two new Oracle Database Appliance (ODA) machines and are looking for some advice or tips.  These are our first ODA machines, so these are brand new to us.  We realise we have quite a bit of reading to do, so would like to avoid investigating something that may not be possible.

These ODA X5-2 machines comprise two nodes each and will be located in alternative datacentres, for resilience and to split our workloads.  The initial build of the ODA machines was completed using the Virtualized Platform, rather than a Bare metal install.  We are planning to migrate 26 production (plus 26 standby) databases, and 52 test databases (26 uat and 26 test), between these ODA machines.  So, for example:
