Is it possible to trigger a workflow by updating a document?

I want to create a 1 step workflow where a user/group receives an email notification when a document is updated by setting a metadata field to a specific value.

eg. User A updates a document and changes the value for the field "Status" from "Approved" to "Ready for Collection" and then when they select update an email notification is sent to a user with a link to the document.

Is this possible?
