Dynamic Data Sets in Shells and Bulk Edit

Based off our business update there are some new fields introduced into the Project shells. These fields are driven by Dynamic Data Sets. Seems like it is not possible to update projects via bulk edit based off a selection criteria as these fields are driven by Dynamic Data sets. Is there any other efficient way to update rather than visiting each project as we have close to 500 projects to be updated.

Any help is greatly appreciated.
