Restrict updates to fields during order entry

Hi,

What are to ways to restrict fields in sales order header? I want to restrict warehouse field and want to be defaulted as per the defaulting rules.

Processing constraints are getting triggered only after saving the order meaning when the order is entered status and not when order is being created having null order status.

Is form personalization only the way or we have some standard setups?
