Difference between Simplified mode and KIOSK mode?

My reading of E1: SOLEXP: How to Configure, Create and Manage the Simplified Navigation Feature and Form UI changes with 9.1.5 (Doc ID 1952072.1) leads me to believe that there is a difference between Simplified mode and KIOSK mode.  Could someone please point me towards some documentation that explains the difference (preferably with screen shots or video)?
