Order Preparation Days

We are testing the use of the order preparation days preference.  We are trying to adjust the scheduled pick date by one day.  While entering the order the date appears to be properly backed off by the day however after saving the order the date appears to revert itself.  We can see in the sales ledger that the correct date was present.

What would cause this to change back?

We are on tools / apps 9.1
