Upgradation of db charset from WE8MSWIN1252 to UTF-8

We are in the process of upgrading one of our database from WE8MSWIN1252 charset to UTF-8. As a first steps we have run a scan report to see how many records are getting impacted and the percentage of data loss etc.

We see that there is a huge list of records getting impacted due to this charset conversion also there is a big list of records which are exceeding the length of the column after migration.

Can someone suggest me on the best way of doing this conversion with a minimal data loss. Also on the best way of doing data correction to get rid of junk chars that appear after conversion.
