Asset Organization - Inventory Org Behaviour

This is probably a silly question but hoping someone can point me in the right direction.

We recently refreshed our test environment and have reconfigured it but I am now seeing different behaviour on the EAM Asset Number form and figure it is a missing setup somewhere but can't seem to track it down. Hoping for some pointers.

Previous scenario.

1. Receive an Asset into say Org: INV1

2. Installed base creates the asset and the form displays the Organization as INV1, while in the backend we can see the current_organization_id = EAM Org ID

3. We then issue the material out of stock.
