Can I rename or remove default 'owner' field?

We want to change the terminology of 'ownership' on our accounts and contacts.  Can I rename the field that says 'owner' to say something else without any impacts?  If not, can I simply take it off the page layout and create a new field entirely?  If so, does it need to be a picklist populated by login or can it be a short text field?
