Fulfillment Tolerance Rules?

Are there any sort of rules in fulfillment where we can set a tolerance for inventory depletion/allocation?

We are looking into ways to prevent a huge sales orders from depleting inventory.  I reviewed fulfillment processing options and didn't see anything, but I thought I would make sure.
