SQL plan getting changed after weekly Gather stats run

We have upgrade Oracle EBS (12.2.4) database from (11.2.0.4) to(12.1.0.2)   two month back .  Few concurrent request which  were completing  within  the acceptable time for first 7 Weeks now   getting impacted and its running for more than an hour . To fix  he issue we imported the old 11.2.0.4 sql plan to 12.1.0.2  database   however what we are now observing  that after   every week schedule  gather stats run the sql plan getting changed for some of the program  and this impacting the  performance of the run time  hence can you please suggest best approach to  fix the issue also how
