Downside of having too much undo

We currently have our endo sized at 2 30GB files.  It seems like this would be plenty for almost anything but there are still jobs that crash with snapshot too old errors.

We have enough disk space to make the undo larger but I'm wondering if there are any downsides to creating too much undo.

We're running 12.1.0.2 on an Exadata X-6
