Process to Discrete Transfers

We have only 1 process manufacturing plant for jewellary and all items are lot costed. To facilitate transfer of finished goods across all states have created 46 inventory organizations as process manufacturing enabled.

Now we are in the process of upgrade from 12.1.2 to 12.2.6. With the introduction of process to discrete transfer in 12.2 we want to see if all other orgs except the manufacturing plant can be setup as discrete inventory.

Can someone guide us if this is feasible to go with this and will there be any advantage? Also, we might be having the returns of FG scenario of discrete to process.
