Cloud based environments for end-user training?

Is anybody using the cloud based solution to provide end-user PeopleSoft training?   Thinking:  We created our own PeopleSoft training DB/Image/instance (or use a Demo, but we would probably need it to be our own).  Then have new instances created/recreated for every training class to use.    So if we had 4 concurrent classes each would have their own distinct instance to use.  Then could easily reset/refresh the new training instances for the new classes moving forward.

Would it be feasible to create an separate instance for each student so everybody gets their own database?  I think we would max out at 60 concurrent students (or so).
