Recheck Gross Margin Before Shipping

Is there a seeded way to check gross margin before shipping.  We currently have the gross margin hold set up and are checking it at booking, but we are a FIFO costing org and the item cost can change drastically from when we book the order to when we ship the product.  I'd like to figure out a way to check the GM again before shipping - like on pick release.  Is that possible without customizing the workflow?
