Activities within Opportunities and Leads default to today's date can that be changed

When looking at Activities from within Opportunities or Leads the default for Start and End date is today.  We don't want any default on these forms.  We want to see all activities as the default.  We've reviewed the processing options (P01350, P01300, P01301, P01302) and when applicable they are all set to not default today's date.  But I'm wondering if that processing option is only for creating new activities and not the default when viewing activities.  Our users want an easy way to view all activities for a particular Opportunity or Lead while in those applications.  They are complaining that
