Retrieving Enrollment history/changes during same enrollment period.

We have several life events setup so that employees can enroll in their benefits by going thru ESS. During their enrollment window, employee can enroll multiple times and choose to elect plan A om day-1 and Plan B on day-2.  I have couple of questions regarding these enrollments:

1)  Is it possible to identify and extract all the changes/history, employees make during enrollment period for the same life event?  i.e. during 14 days enrollment window, employee choose Plan A, then Plan B and then settled for Plan C (for particular plan type).  When I checked enrollment results table, i noticed that it did not keep the history.
