Assign new additional Default Category Sets

Hi all,

A new requirement has cropped up where we want to have 2 category sets assigned to all the item by default across all functional areas.

Is there a way to add these to existing list of Default category sets?

I do understand that before we do that, we will need to update all the items such that all the existing items have that category set assigned to them.
